ウチ生地屋だから直売ってのが出来ないのが痛いのよね…。生地だけあっても一般家庭で揚げられない。生地はマカロニのような感じで硬いプラスチックのような状態になっているんだけど、揚げメーカーへ出荷する時点ではまだ揚げるのに適した水分量よりも多く含ませて乾燥させた物にしてある。何故か。揚げるのに最適な水分量まで乾燥させると輸送中に割れてしまうから。マカロニのようにじっくり長時間乾燥させる製法なら良いけどそうではないし、厚みも薄い板状なので割れちゃう。揚げる前に追加で乾燥させないと綺麗に膨化して揚がらない。ひねり揚げなんかものびのびと捻らない(´・ω・｀) @hwgeezer.bsky.social
