Chicken of the woods . Growing at the base of an oak, so L. cincinnatus . The other sort of chicken about town (or woods) is L. sulfureus, which is yellow below instead of white and appears any place else on oak . Both best young, seared or pickled . Smells like maple syrup in the pan . #mushrooms

"So here's where a Latoporus sincinatus fruited last year on this oak tree with, it looks like it might have been cut off and it coppiced early in its life, but it's got a dead snag going halfway up as high as the rest of the tree. So there isn't one there, but if you go a little bit to the left, what do we have here? We have a really nice example of a Latoporus sincinatus. You can see it's not yellow underneath, but white. That's at the perfect stage to harvest. Really a very nice mushroom."
