"This is my one pan red curry with eight different vegetables. I honestly love how easy it is to prepare and cook making it my number one choice for a quick meal in under just 20 minutes. Chop your vegetables to bite-sized pieces. You can use any vegetables or plant-based protein. I'm adding red bell peppers, long beans, eggplant, baby corn, carrots, oyster mushrooms, tempeh and tofu puffs. Then I'm adding Thai curry paste from Auroi Thai along with some coconut milk and letting the vegetables cook before adding in soy sauce, vegan fish sauce, water, more coconut milk and stirring in kaffir lime leaves and fresh basil. Simmer for a few minutes so the vegetables can soak up all the flavor. Garnish with chilies, coriander and lime. Enjoy and follow for more quick and easy plant-based recipes."
